This is one of my go-to “real life” meals — easy, satisfying, and endlessly customizable. It’s high-protein, balanced with carbs and greens, and uses simple swaps (like Greek yogurt for sour cream) to keep it lighter without losing flavor. Great for meal prep, busy nights, or when you want something that actually keeps you full.

Ingredients

  • Chicken Base
    1 bag Foster Farms Take Out Al Pastor Diced Chicken (Costco)
    2 cups uncooked white rice
    1-2 cups Minute Rice Brown & Quinoa cups (for added nutrition)
    2 cups bone broth (for cooking rice, use in place of water)
    Juice of 1 lime
    ¼ cup fresh cilantro, chopped

    Bowl Add-Ins
    1–1½ cups spring mix, chopped
    ½–¾ cup shredded Mexican-style cheese
    Greek yogurt (to replace sour cream)
    Hot sauce of choice

    Homemade Pico de Gallo
    2 medium tomatoes, diced
    ¼ cup red onion, finely diced
    1 small jalapeño, minced (seeds removed for mild)
    2 tbsp fresh cilantro, chopped
    Juice of ½ lime
    ¼ tsp salt
    ¼ tsp black pepper
    ¼ tsp garlic powder
    ¼ tsp onion powder

Directions

  • Cook the Chicken
    Cook al pastor chicken according to package directions until browned and heated through. Set aside.
  • Cook the Rice
    Cook white rice and brown/quinoa rice using bone broth instead of water. Once cooked, stir in lime juice and cilantro.
  • Make the Pico
    Combine all pico ingredients in a bowl. Taste and adjust seasoning as needed.
  • Assemble the Bowls
    Start with rice, then add chicken, spring mix, pico, cheese, Greek yogurt, and hot sauce.
  • Serve & Enjoy
