This is my easy button taco recipe. I tell myself I’ll switch it up… and then I don’t, because it just works. Using salad shrimp makes it fast, the seasoning builds a light sauce that actually sticks, and the toppings keep everything fresh and balanced.
It’s bold without being greasy, filling without being heavy, and perfect when you want something satisfying that still feels light.

Ingredients

  • Shrimp Filling
    Salad shrimp (or any shrimp, peeled & deveined)
    ½ red onion, finely diced
    Fresh cilantro, chopped (to taste)
    Cajun seasoning (to taste)
    Old Bay seasoning (to taste)
    Garlic powder (light sprinkle)
    Onion powder (light sprinkle)

    For Assembly
    Soft taco shells
    Shredded lettuce
    Pico de gallo (homemade)
    Avocado mash (Good Foods brand from Costco)
    or mashed fresh avocado

Directions

  • Add shrimp and diced red onion to a skillet over medium heat with a small amount of oil.
  • Season with Cajun seasoning, Old Bay, garlic powder, and onion powder. Stir to coat evenly.
  • Let the shrimp simmer, stirring occasionally, until the liquid reduces and the seasoning forms a light sauce that sticks to the shrimp.
  • Stir in fresh chopped cilantro and remove from heat.
  • Warm taco shells.
  • Assemble tacos with lettuce, shrimp mixture, pico de gallo, and avocado mash.
  • Serve immediately
