This is one of those “throw it in a bowl and somehow it tastes fancy” meals. Rotisserie chicken makes it effortless, Greek yogurt keeps it lighter than traditional mayo-heavy chicken salad, and the apple + grapes give it that perfect sweet crunch.
I usually eat this on Dave’s Killer Bread, but it’s also great in wraps, lettuce cups, or straight out of the bowl with crackers or chips when life is chaotic.
Bonus: it tastes even better after chilling for a bit.
