It’s high-protein, balanced with carbs and greens, and uses simple swaps (like Greek yogurt for sour cream) to keep it lighter without losing flavor. Ingredients
Chicken Base
1 bag Foster Farms Take Out Al Pastor Diced Chicken (Costco)
2 cups uncooked white rice
1-2 cups Minute Rice Brown & Quinoa cups (for added nutrition)
2 cups bone broth (for cooking rice, use in place of water)
Juice of 1 lime
¼ cup fresh cilantro, chopped
Bowl Add-Ins
1–1½ cups spring mix, chopped
½–¾ cup shredded Mexican-style cheese
Greek yogurt (to replace sour cream)
Hot sauce of choice
Homemade Pico de Gallo
2 medium tomatoes, diced
¼ cup red onion, finely diced
1 small jalapeño, minced (seeds removed for mild)
2 tbsp fresh cilantro, chopped
Juice of ½ lime
¼ tsp salt
¼ tsp black pepper
¼ tsp garlic powder
¼ tsp onion powder
Directions
- Cook the Chicken
Cook al pastor chicken according to package directions until browned and heated through. Set aside. - Cook the Rice
Cook white rice and brown/quinoa rice using bone broth instead of water. Once cooked, stir in lime juice and cilantro. - Make the Pico
Combine all pico ingredients in a bowl. Taste and adjust seasoning as needed. - Assemble the Bowls
Start with rice, then add chicken, spring mix, pico, cheese, Greek yogurt, and hot sauce. - Serve & Enjoy
